The Castel Savina vineyard occupies two hectares on the south-facing slope of the Savina hillside in Meljine, Herceg Novi - positioned between 70 and 120 metres above sea level with uninterrupted views across the Bay of Kotor.

This elevated position offers the vines maximum sun exposure throughout the growing season, while the sea below acts as a natural temperature moderator. Cool night breezes preserve acidity and aromatic complexity; warm days ensure full ripeness. The result is fruit that is simultaneously rich and fresh - a balance that defines the Castel Savina style.

The vineyard is planted at 4,500 vines per hectare, with yields kept intentionally low at around 4 tonnes per hectare. This restraint concentrates flavour in every grape.

From bud to barrel

The harvest at Castel Savina is entirely manual. We believe that hand-picking is the only way to select fruit with the precision a boutique winery demands - each cluster examined individually, harvested at its optimal moment.

For our white wines, the harvested grapes undergo cold maceration for three days before a seven-day fermentation. The resulting wines are bright and aromatic with well-preserved freshness. Our Chardonnay spends its final months in French oak, adding texture and depth without masking the wine's natural vitality.

For reds, a longer maceration period - typically 25 to 30 days - extracts colour, tannin and structure from the skins before the wine moves to French oak barrels in the estate cellar, where it continues its slow transformation.
